Coconut Overnight Oats

Gluten Free | Pegan | Dairy Free | Breakfast

Ingredients

  • 1 cup gluten free oats (I use Trader Joes)

  • ¼ cup coconut flakes

  • 1 can full fat coconut milk

  • 2 tbsp chia seeds

  • 1 tbsp local honey

  • Handful of frozen blueberries or fruit of choice

Directions

  • Combine all ingredients in 32oz mason jar and place in refrigerator overnight (or at least for 4 hours)

  • Enjoy in the morning!
