AIP Instant Pot Butter Chicken
AIP Compliant | Gluten Free | Pegan | Dinner
Ingredients:

3 pounds boneless skinless chicken breasts

1 15oz can full fat coconut milk
-
1 6oz can tomato paste
-
2 tsp chili powder
-
1 tsp cumin
-
1 tsp paprika
-
1 tsp turmeric
-
1 tbsp sea salt (more to taste)
-
½ tsp cayenne pepper (if you like spice!)

Fresh basil, cilantro, lime juice for topping
Instructions:

Place all ingredients into the Instant Pot and stir
-
Close lid and ensure pressure valve is closed
-
Press “pressure” button and set time for 7 minutes
-
After 7 minutes, allow 2-3 minutes before releasing pressure valve
-
Release pressure valve, stir in lime juice and shred (or chop) chicken
-
Serve over greens, or gluten free grain of choice
-
Top with fresh basil and enjoy!
