AIP Instant Pot Butter Chicken

AIP Compliant | Gluten Free | Pegan | Dinner


  • 3 pounds boneless skinless chicken breasts

  • 1 15oz can full fat coconut milk

  • 1 6oz can tomato paste

  • 2 tsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp turmeric

  • 1 tbsp sea salt (more to taste)

  • ½ tsp cayenne pepper (if you like spice!)

  • Fresh basil, cilantro, lime juice for topping



  1. Place all ingredients into the Instant Pot and stir

  2. Close lid and ensure pressure valve is closed

  3. Press “pressure” button and set time for 7 minutes

  4. After 7 minutes, allow 2-3 minutes before releasing pressure valve

  5. Release pressure valve, stir in lime juice and shred (or chop) chicken 

  6. Serve over greens, or gluten free grain of choice

  7. Top with fresh basil and enjoy!
