Easy Baked Salmon with Orange Ginger Glaze

​Serves 2 

Ingredients

  • 2 individual portions of salmon

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • For Orange Ginger Glaze:

    • 1 tsp orange zest

    • ½ cup fresh squeezed orange juice

    • 1 tbsp coconut aminos

    • 2 tbsp water

    • 1 inch ginger root (or frozen cube from Trader Joes)

    • 1 tsp honey (optional)

Directions

  1. - Preheat oven to 350

  2. Season salmon with salt and pepper to taste and 1 tbsp olive oil per salmon filet

  3. Place salmon on parchment paper lined baking sheet and bake for 8-10 minutes

  4. For Glaze

    1. Place all ingredients in blender and blend until smooth

  5. Top baked salmon with glaze

  6. Serve over greens of choice or with a side of roasted veggies and enjoy!
